Hi Andrea,
most of this can currently be done at JGrass level. However we are
going to port the GRASS format to geotools coverage level, at which
point most of the terrain analyses of JGrass will be ported at
coverage level. The map algebra tool is currently started in the
google summer of code project.
It will need some time for those to come however.
I don't think (but would be glad to be wrong) that raster map creation
like slope or aspect is supported by geotools.
