Jody already answered from the uDig side. If that doesn't work out for
you, check out "altersig".

It's a project to build on top of geotools in the same way as uDig but
is Swing only (or perhaps it uses the netbeans rcp system, I am not
sure). It is much less mature than uDig but it's moving fast and looks
like a fun project to join. 

Note that both these projects are built on top of Geotools and we have
some way to go in order to bring Geotools viewers up to world class
scientific and cartographic standards.
