You can export the shapefile out in the NAD 83 UTM 12N, and then just 
work with it from there on out.

But I should ask ... why? uDig is supposed to be good at displaying all 
your data on the same screen together; visually it should not make a 
difference mixing and matching shapefiles of different projections.
