no. UDig doesn't do data format conversions yet.

ogr2ogr is a command line tool that should work on mac and has probably
been packaged up nicely by someone. If not, it's unix.

Note that GML is *not* a format so ogr2ogr makes up a
format-based-on-GML-that-fits-the-shapefile for the shapefile being
converted.
