Hi Samuel, sorry I missed you question earlier.

You are correct; uDig cannot guess the range of applicable values :-( 
The shapefile header does not tell us this information ...
I was thinking that you could change the classes to a higher value - and 
just get several entries for the same two values. (I am trying this with 
the sample countries.shp data set based on the LANDLOCKED attribute. But 
it is "too smart" for me and only shows up "N" and "Y".

I was able to cut and paste in the XML page - but that is no fun.

I am going to be revisiting the style editor on udig trunk in the next 
couple of days and will see if this is an easy fix to make (kind of wish 
there was two steps - decide on your categorization - and then decide 
how to color it.
