So the map editor and basic GIS tools is almost the definition of uDig :-)

So add everything except the edit tools (you did not need editing?) and 
printing plugins; yes that is a lot of plugins. If you do not need 
support for some formats you can leave out the catalog plugins for those 
forms (as an eaxmple you did not need WFS so 
net.refractions.udig.catalog.wfs) can be left out.
